Poor Baker Beam, great-nephew of Jim Beam. His eponymous Baker’s bourbon ended up a sleeper bottle alongside rightfully lauded Booker’s bourbon and stellar limited editions of Knob Creek. But this year, Baker’s has reason to boast, as it gets the single-barrel treatment. It will remain 107 proof and a minimum of 7 years old. However, the addition of details like barreling date, age, warehouse, and barrel number will make for fun treasure hunting. Baker’s Single Barrel Kentucky Straight Bourbon (No. 000185706), 53.5%

The nose is a bit tight, reluctantly giving up brown sugar on warm cereal, dried banana chips, honey peanuts, and figgy dried fruits. The palate comes across really dense and chewy with dark berries and sweet prune notes, laced with licorice and cinnamon spice. The dark fruit flavors feel lush and decadent, while drying oak lends lovely maturity and polish. As Baker’s is now a single-barrel product, your experience may vary with each bottle, although the proof will remain the same.

Rich, multi-layered nose: vanilla, cornmeal, berries (black raspberries, wineberries), and broad-shouldered oak. Powerful, but not overproof hot in the mouth; controlled. The berries sing a high counter-melody over the corn-oak beat as the whole experience rocks along. It’s powerful, sweet, authoritative, and finishes with a reprise of it all: berries, corn, vanilla, and stronger oak. Mature, complete bourbon with a 7 year age statement, and a real sleeper in the Small Batch Collection.
