Whiskey Del Bac Dorado, 46%

The smoke greets you on the nose, with charcoal briquettes, fireplace soot, and cinnamon candy alongside wax paper, peppermint, and butterscotch. The palate is light but flavorful with pepper spice, barbecue sauce, apple skins, and grilled peaches. A lengthy finish tacks on more black pepper, chocolate, coffee, and dried sage. The mesquite smoke here is ever-present but never too forceful, with strong balance and construction throughout.

Whiskey Del Bac Distiller’s Cut Sauternes Cask Finished (Summer 2021), 57%

A blend of the distillery’s two flagship whiskeys, Dorado and Classic (both made from 100% mesquite-dried malt), finished in sauternes casks. Licorice, cedar, and sandalwood, with Del Bac’s signature campfire and mesquite influence presiding. Powerful and chewy on the palate, led by lush flavors of blackberry tart, cooked peaches, figs, dark chocolate, and campfire smoke. A long finish offers more dark fruits, chocolate, and coffee. A big whiskey with plenty to savor. (751 bottles)

Whiskey Del Bac Dorado, 45%

Mesquite-smoked single malt from Arizona. Very rich and aromatic, dripping with barbecue sauce, paprika, juicy red apple, and smoked bacon on the nose. A full panoply of barbecue flavors on the palate—brisket, roast chicken, ribs. Cayenne, walnuts, and spiced ginger balanced with oranges, apples, and pears. Some tar and creosote notes. Juicy, meaty, and smoky all at the same time. The herbal, vegetative notes are intriguing, but can be divisive.
